Blueberry Broccoli Salad with Poppyseed Ranch
Ingredients:
Salad:
2 cups fresh spinach
1 cup chopped broccoli florets
1 cup fresh blueberries
1 diced avocado
1/4 cup dried cranberries
1/4 cup crumbled feta cheese
1 tbsp poppy seeds
Dressing:
1/2 cup plain Greek yogurt
1/4 cup buttermilk
1 tbsp apple cider vinegar
1 tbsp honey
1 tbsp poppy seeds
1 tsp dried dill
1/2 tsp garlic powder
Salt and pepper to taste
Instructions:
Combine all salad ingredients in a large bowl.
Mix dressing ingredients in a small bowl until smooth.
Pour dressing over the salad and toss to coat.
Serve immediately and enjoy!
